The Crust:
- 1 cup almonds ground in a food processor or almond flour
- 2 heaping Tbsp. of flaxmeal
- 2 heaping Tbsp. of coconut flour
- 2 large free-run eggs
- 1-2 Tbsp. Olive oil
Preheat the oven to 375˚. In a large bowl, mix the almond and flaxmeal with the coconut flour. In a separate bowl, beat the eggs with the olive oil, then add the eggs and oil to the dry ingredients. Mix well until a compact, firm dough is obtained.
Oil a heated baking stone or pizza tray, and press the dough into a rough pizza shape. Place the pizza in the hot oven and bake for approximately 10 minutes.
Remove the crust, add your favourite sauce and toppings, then return the pizza to the oven for another 8-10 minutes.
Suggested Toppings: pesto sauce, caramelized onions, artichoke, roasted red pepper, and goat cheese.
