Whole Grain Waffles

 



Dry
2 cups whole spelt flour
1/2 tsp. sea salt
2 tsp. aluminum-free baking powder
1/2 tsp. ground cinnamon



Wet
2-3 eggs, separate whites from yolks
1 1/2 cups almond, rice, or coconut milk
1/2 cup unrefined extra virgin olive oil
2 Tbsp. honey
1 tsp. vanilla

Beat the egg whites until stiff and set aside.

Stir the dry ingredients together.  Beat the wet ingredients in a large bowl (except the egg whites).  Combine the dry ingredients into the wet ingredients.  Once you have a uniform batter, very gently fold the egg whites into the batter by hand with a small spatula.  Don't over stir.  This will keep your whole grain waffles much lighter.

Cook according to your waffle iron instructions.
