Chocolate Earth Balls

This recipe is my absolute favourite Christmas treat!


1 cup natural peanut butter
1/4 cup local, raw honey (maple syrup or agave nectar for vegans)
2 teaspoons cocoa powder (preferably organic and free-trade)
1/2 cup juice-sweetened dried cranberries
3/4 cup organic rice crispy cereal
1/2 cup dairy-free chocolate chips

Mix the peanut butter, honey and cocoa powder until well combined. Stir in the cranberries and chocolate chips. Stir in the cereal. Refrigerate for 1 to 2 hours.

Using a spoon, scoop small heaps of the peanut mixture from the bowl; roll into 1 1/4-inch balls. Refrigerate for at least 30 minutes.

Can use any of the following substitutions:
1/2 cup raisins instead of cranberries
3/4 cup unsweetened shredded coconut or oatmeal instead of rice cereal
1/2 cup carob chips instead of chocolate
1/4 cup sesame seeds
1/4 cup finely chopped nuts (walnuts, pecans, etc.)
Optional: Roll each finished ball in the coconut, sesame seeds and chopped nuts.
