Turmeric Squash Soup






Squash is warming and reduces inflammation, and the seeds have anti-parasitic properties.

Turmeric Squash Soup

1 onion, diced
2 tsp. turmeric powder
1 butternut squash, peeled & diced (discard string and save seeds for roasting)
1 cup homemade rice milk
1 cup homemade vegetable stock
1/4 tsp. sea salt

Place all ingredients in a crock pot and cook on low all day or overnight. Puree cooked soup and then stir in 1 Tbsp. maple syrup. Add fresh-ground black pepper or cayenne to taste if desired.
